About my Recipes:


To give you some idea where I came from. Let me explain---

Since I was 4yrs old, I was in the kitchen helping my grandma(s) and my mom cook. I was fascinated with all the process you had to go through to make something just to eat but yet taste so yummy. After that at age 11 my brother and I got addicted to any cooking show we could get our hands on and then when my mom got cable so we could get Food Channel it was like the Holy Grail from the Monty Python. With that and taking summer courses and through out the school year cooking classes. At a young age I was making sushi rolls, Fried Chicken, Biscuits and Gravy, breads and etc...

Sadly when I was 14yrs old my brother passed away from cancer and with that my love of cooking died as well. Until I was 22yrs old when I got my own apartment. I remember staring at the stove thinking "My god I don't remember how to cook anything at all." I surely thought I was going to have to resort to Ramen for the rest of my life.  As I was pondering the idea I realized that I shouldn't be afraid of something I know I have conquered and I shouldn't let that ever stop me and that morning (not knowing what I was doing) I cooked a delicious omelet. Probably thinking "that is so easy" but let me tell you it is not when you haven't cooked in almost 10yrs.

With that omelet though I remember the excitement I had when I was child. I remember all the memories with my brother. And that spark grew into one of my favorite passions.  I am now a confident chef and make my own recipes.

When I was 18yrs old I was very overweight - I was 269lbs (but I am 6'1ft) and wore a size 22. I tried dieting and working out and I wouldn't lose weight. I remember thinking that what is the point I am always going to be fat. It wasn't until I got a job at summer camp for children that I lost 40lbs. It was all the running around like a crazy person after kids that finally kicked me into hyper gear. I realized right then and there that losing weight is about changing one's life style. So after that job ended I continue to go on 3-4 mile walks 3-4 times a week.

When  I was 23yrs old, I got the wrong idea that starving oneself with super small portions or skipping meals will get me thin and it did. Yet I could never keep it up and I would gain the weight and then some. It was a constant battle.

Now at age 26, I gained about 30lbs and at a size 16 from college days were I got down to a size 12 and now I can't understand why I have gain so much weight. True, I wasn't walking around campus anymore  but then again I wasn't drinking anymore (unlike college days where beer was like water in that town), I was still going on long walks and I was still eating low calories but I couldn't do the starving/ low portion meals any more. I started to get depressed about my recent weight gain over the past year and half. Then one day I was speaking with my co-worker and she told me about the Low-Carb diet. I laughed at the idea. "ME!!! give up carbs!! I love my breads, pasta, cereals way way way too much.... I would never survive." Then she continue to tell me she lost 60lbs + over a 2 yrs on the diet. I couldn't believe that my skinny bone co-worker was ever overweight. So I thought why not what do I have to lose.

I am proud to say now after 3 and half weeks on the diet I lost 14lbs. I make all my own food at home (which my boyfriend loves and even he has lost weight as well), I have to say it, I don't miss the carbs at all. I still get them time to time but the food I make is so good and healthy I feel better about myself. I get to go into my closet and wear more of my clothes instead of sighing. This is not going to be a passing phase, instead this is another life changing moment that I will continue forever.

All my Recipes are devoted to Low Carb and Low Calories. I am going to try to post a new recipe every week. I hope you love the food as much as me. I am trying to make the recipes step by step and straight to the point and simple -- so if you never cooked you wont look at it and think "AHHH!!! What are they talking about -- I have to do what???? "  but if you ever have any questions feel free to ask anything.
